Chicken Mole Rojo (Serves 6 - 8)
Ingredients
Gloria Mole Rojo (500 gm)
Chicken Broth (6 cups)
One whole Chicken
Instructions
Add 6 cups of water to a pot and boil your chicken on medium heat with an onion sliced in half. Add salt to taste. Boil for 15-20 minutes or until chicken is thoroughly cooked with an internal temperature reaching 165 degrees. Remove the chicken from the pot but SAVE the water which now has become chicken stock.
Next gently spoon out your Gloria Mole paste into the heated broth. Stir continuously for about 15 minutes until the paste is dissolved into sauce and thickens into the consistency of your liking. For a gravy consistency cook for 15 minutes. The longer the sauce is on the heat, the thicker it becomes. I like my mole to coat the chicken so I cook my mole sauce for about 30 minutes, stirring occasionally.
Once the sauce is ready, add your chicken meat or protein of your choosing into the sauce.
Serve and enjoy! (Vegetarian options: Replace chicken broth with water or vegetable broth and protein/veggies of your choice)
